Liberty Dining Introduces Weekly Pop-Ups

Liberty University’s Reber-Thomas Dining Center is keeping things fresh this academic year by offering weekly pop-ups, each showcasing a new, delicious menu item. Executive Chef Stephen Dziedzic, in partnership with Sodexo and various food brands, selects each pop-up based on student preferences and exciting new products from vendors.

Reflecting on the goal behind these weekly pop-ups, Chef Dziedzic shared, “We wanted to increase student engagement and break up the routine in the dining center. The pop-ups allow us to introduce something new and exciting every week, providing students with fresh options they wouldn’t typically see.”

Here’s a look at some of the fan-favorites so far:

• Big Slice Pizza – Oversized slices with a variety of toppings
• Roasted Veggie Bowl – A health-focused option loaded with seasonal vegetables
• Topped Focaccia – Freshly baked focaccia topped with savory ingredients

• Cloud Burgers from Branding Iron – Juicy, smash burgers

• Pierogis from Mrs. T’s – Classic pierogis filled with potato and cheese
• Nashville Hot Chicken Sandwiches – Crispy chicken with a spicy Nashville twist
• Top Your Own Cinnamon Rolls – Cinnamon rolls with a selection of toppings for customization
• Johnsonville Sausages – A hearty, savory option with premium sausages

According to Chef Dziedzic, the "Top Your Own Cinnamon Roll" has been the biggest hit so far, with students eagerly lining up to add their favorite toppings to the warm, gooey rolls.

These weekly pop-ups are designed to make dining an engaging experience for students by breaking up the routine and adding exciting new tastes to the menu.
