Produce Stand at Liberty University Starts off with a Bang

Liberty University’s popular Produce Stand kicked off the academic year with great success, breaking records in sales from previous semesters. The stand, held on Friday, August 30, 2024, has been a campus staple since 2017, offering students fresh and healthy food options while utilizing their Dining Dollars and Flames Cash.
This semester’s event featured locally sourced items such as honey and a variety of jams, alongside fruits and vegetables not typically available on campus. As an extra treat, Chef Barry Spence prepared a delicious chicken Florentine pasta with sun-dried tomatoes for students to sample, which was a major hit and sold out by the end of the event.
In a fun twist, Liberty University President Dondi Costin was involved in a special collaboration, where his drawing was featured on tote bags for the Produce Stand. Students could earn a free tote with a $20 purchase or buy one for $5. The reveal of “The Dondi Tote” through an Instagram reel added to the excitement, encouraging students to stock up on healthy produce while collecting a memorable keepsake.

Registered Dietitian Rachel Sanders expressed her excitement about the event: “We’re thrilled to see students actively choosing healthy options on campus and using their Dining Dollars at the Produce Stand. The success of this event shows how small additions, like our tote bag collaboration with President Costin, can make a big impact.”
